To give you the short and simple answer… One per universe. Instead of replacing Wade Wilson as a person, Marvel came up with the idea of exploring different facets of the merc with a mouth through other Deadpools in alternate universes.
Here are a few that have been seen throughout the Deadpool series:
Deadpool 2099
A new addition to the Marvel Universe, Deadpool 2099 is the daughter of Wade Wilson while married to the demon Shiklah.
Dreadpool
Dreadpool was part of several mini series in which he attempts to wipe out all of existence. Eventually he wiped out the entire Marvel Universe.
Zenpool
What happens when an inversion spell effects the Marvel Universe? Zenpool is created. He refuses to hurt anyone, even those who hurt his friends.
The Deadpool Corps
Deadpool never really had a sidekick, but he did lead a team of Deadpools in an alternate universe. The team consisted of Lady Deadpool, Kidpool, Dogpool and Headpool.
